Strawberry & Lime Basil Vinaigrette

ingredients

*use more or less honey and lime juice depending on ripeness of strawberries.

1 cup fresh strawberries

1 shallot (about 1/2 cup)

1/4 cup packed Bonverts lime basil

3/4 extra virgin olive oil

1/4 cup white wine vinegar or white balsamic vinegar

1-2 tablespoons lime juice

1-2 tablespoons honey

1/2 teaspoon fine grain sea salt, to taste

freshly ground black pepper, to taste

instructions

Place all ingredients into an immersion blender container (or similar).

Blend for about a minute or until the shallots and basil are pureed and the dressing is emulsified.

You can store dressing in a glass jar for up to a week or frozen in ice cube trays for up to 6 months. When refrigerated, the dressing might solidify and separate. Just bring it to room temperature and shake it before using.
