Our founder Paul grew up in New Orleans, La. learning to cook from his mother, an adventurous and creative family chef. As she prepared and served culinary delights from around the world, she used vegetables straight from the garden, and challenged her children to try new foods. Inspired by his mother and the food of New Orleans, Paul has been growing fresh vegetables and cooking for his family for over 30 years. Paul brings this same enthusiasm for growing and cooking with fresh and pure vegetables to Bonverts.
In 2020, the farm found a home in Denver, Colorado, and Paul’s sister Anne joined Bonverts. Together they are growing with enthusiasm and bringing you the most diverse, tasty, fresh vegetables all grown right here.
Starting with formal training in agriculture, Paul pursued his dream of making a difference and inspiring others through a long career in environmental science and safety. At last, he has combined his training and life experiences into one: an environmentally conscious, sustainable, clean, safe, hyper-local farm. For Paul, Bonverts is a dream come true. “I’ve always wanted to do something that uses all of my life experiences and fondest memories, and that is why I founded Bonverts.” The name Bonverts (pronounced “bon-vehr”) roughly translates from French as “Good Greens.” It is also a nod to the French influence of New Orleans and Paul’s family heritage.
Powered by Freight Farms, Bonverts provides greens, herbs, edible flowers and petite vegetables that are: Hyper-Local, Pesticide Free and Food Safe, Available Year-Round, Rare and Unique, all with competitive, steady long-term pricing. The Freight Farm is an energy-efficient controlled environment that reclaims air moisture making it water-positive in certain conditions. We use 99% less water than soil-based farming. Hyper-Local means reduced impact to the environment, by minimizing transportation.
Our overall environmental impact and carbon footprint is reduced because we grow and deliver energy efficiently, without the use of pesticides, herbicides or genetically modified seeds.
We have a strict chain-of-custody and use sterile techniques to assure food safety. We are not impacted by the weather, so there is no need to obtain crops from miles away or from outside the U.S.

So many people have lost touch with where their food comes from. Don't you want to know the story behind your food? Is it sustainably grown? Is it clean? Is it at the peak of quality? We set out to learn about sustainably-grown food, and we bought the farm! Paul, Liz and Anne Espenan, are the founders of Bonverts. Bonverts roughly translates to "good greens." And that is exactly what we grow, right here, in Denver. We own and operate a vertical hydroponic farm that has 2 1/2 acres capacity, in North Denver. We grow year-round in a controlled environment that uses 95% less water that traditional agriculture.
We had the dream of changing the way people eat, and bringing people together over food. We do that by growing food here, for our community. It is in our DNA to cook and eat good food--we are from New Orleans, of course, and we want to share everything we grow with y'all. That means the freshest, tastiest, cleanest food with the lowest food miles. We can't wait for you to taste it!
Responses from most people are: "The best lettuce I have ever had." and "Wow, this lasted forever in my fridge because it was so fresh when I got it, and it was still delicious." Visitors at the farmer's market were enthusiastic about our delicious taste and freshness, and wowed by the wasabi arugula. Chefs like the variety, and the creativity it sparked. Vegans declared the white turnips "on point." All in all, the time we have taken to perfect our crops has been well spent, but we'd like your opinion.
Almost too good to be true, you can get fresh locally grown lettuces, greens and herbs just 24 hours after harvest. Pick up weekly from our farm, and we will give you an insulated tote! We've tested it fully loaded and it works well without any additional plastic bags to recycle.
Sure, you could enjoy all the things we grow raw, they are that good. But what fun it is to turn the Scarlet Frills Mustard Greens into a pasta dish, or the wasabi arugula in to a spring roll? Our produce will always come with a recipe to try.
Our Mission: To provide the purest, high quality hyper-local greens, herbs, and vegetables available. We will give back through donating at least 10% of our profits to local philanthropy and by employing the underemployed.
